The Farm

Our farm is located near St. Matthews, SC, in the Edisto River watershed. The 100 acre farm is a mix of hardwoods and fields, in the sparsely inhabited and beautiful Calhoun County, SC. Every morning, we whistle with the birds while bathing nude in a hidden spring...using homemade soap...

Some things that differentiate us from farms with more exhaustive lists of attributes and superlative are: 200 acres of kick-ass countryside tended by a real shepherd. Diversified breeds, feeds, and seeds. Real grazing. Real masting. Certified Humane - third party independent verification that we love pigs. Reliable, consistent quality with friendly, prompt service. (Someone learned to communicate...thanks couples therapist!)

Our pigs are healthy and happy! Why wouldn’t they be? They graze on pastures, forage on forest floors, build their own nests, manage their own diet, live and sleep in one large herd, procreate whenever they like, and are in the presence of a master swineherder all day long. Emile DeFelice, Father, Farmer, Founder, Dear Leader

Emile DeFeliceEmile is an artisanal pork producer, and operates Caw Caw Creek Pastured Pork in St. Matthews, SC. For many years he was a board member and South Carolina director of Carolina Farm Stewardship Association, as well as the founding Chair of the South Carolina Food Policy Committee. In 2006 he was a losing (but effective!) candidate for SC Commissioner of Agriculture, running on his slogan “Put Your State On Your Plate,” founded Columbia, SC’s All Local Farmers’ Market in 2005, and recently served as a member of then-candidate Senator Obama’s Agriculture Advisory Committee. Emile loves food, the challenge of farming and business, and finding ways to connect farmers and feeders.

Erin Curtis, Recovering Peace Corps Volunteer &
Senior Vice President in Charge of Whatever

Erin CurtisErin Curtis is an '06 graduate of the University of South Carolina where she majored in Media Arts and Film Studies with a focus in documentary production. Post-diploma, Erin took off for Kazakhstan where she served for over two years as a Peace Corps Volunteer. She once again finds herself stateside, working for Caw Caw Creek, the All-Local Farmers' Market and various media production projects across the state.

Bob Medlock, Porcine Transit

Bob Medlock received his undergraduate degree from Wofford College, and immediately enrolled in the doctoral program at Caw Caw Creek University. After repeated appearances before the disciplinary committee there, he received his PhD in Porcine Transit some forty years later. Now Bob is frequently spotted practicing his craft, extemporaneously delivering choice organic pork to discriminating chefs…in a Prius truck.

Do you have a wholesale sign up?
Not yet! But we're working on it! The majority of our business is working with restaurants across the country. If you'd like to consider using our pork in your restaurant please send us an email.

Where do you ship?
We ship to the continental United States! Given the nature of our product, we aren't able to ship internationally or to Alaska or Hawaii.

Can we visit the farm?!
Yes! We schedule farm tour days a couple times a year. If you'd like to tour the farm send us an email, we'll add your name to our inquiry list and notiifiy you the next time we schedule a tour!

Minimum order is $75.

Shipping estimates & totals include a $15 charge for packaging.

Our pork is shipped frozen and will arrive within 2 days of being released for shipment. For the summer months (June, July and August) all packages must arrive within 24 hours of being released for shipment. As soon as your package is released you will receive an email notification with a tracking number.

We ship Monday through Wednesday until 1PM via FedEx.

FedEx Standard Overnight is used for customers who live more than 24 delivery hours away from us here in sunny South Carolina. Check here to see if that's you! Who says pigs don't fly?!
